What's the best way to play Doom 1 & 2?
Should I go with the Steam version or is there and enhanced version somewhere? Does it work fine in Windows 7 64?

Yes this version works fine in 64-bit. This is the original DOS version that runs at 320x200 in DOSBox. The BFG version does run at a higher resolution, however is is censored and has a few things missing.

The main reason for getting DOOM/DOOM2 nowadays is to run it with source ports- modifications of the Doom engine in which normal users like you and me take the Doom source code and add fixes, enhancements, and ensure it works on modern technology.

But yeah if you want Doom, Doom2, and Final Doom, the "Classic Doom" package or any of the individual releases underneath it are the versions to get,

Find either Zandronum (MP) or GZDoom (SP) and get the Brutal Doom mod. Best version yet.

Or if you just want it as close as id made it, I'd just get GZDoom and point it to your doom.wad.

Otherwise you'll be playing it as it was in 1994. No mouse and 320x240 resolution. Not that's a bad thing, its how I played it back in the day.

Skulltag is Zandronum now.
If you want a classic experience, Chocolate Doom. If you want a lot of mods, maps, etc, Zdoom/GZdoom (GZdoom is on OpenGL). Zandronum is good for multiplayer.
If you want to play Doom as you knew it many years ago, well, DOSBox.

Actually, Mishura, I'm pretty sure Doom 1 was the first id game to incorporate the use of a mouse.

So if you were playing Doom like it was back in 1994 (through DOSbox or Chocolate Doom), you'd still be able to use a mouse.

Skulltag is easy. It ups the game's resolution and allows you to use mouse controls and a ton of extra features if you want.

Doom was definitely not the first game id incorporated the mouse into. Wolfenstein also had it and Catacombs Abyss before that. I think even Commander Keen supported it in some function but do not quote me on that.

If you want to emulate the original experience of DOOM, use "Chocolate Doom".

As it uses the features of the original DOOM, also supports Steam Cloud and runs on Windows

But if you want something new, try Zandronum (:
