Montaron and Xzar getting angry with me
I told them I would help them get to nashkel after I got my business done first. I decided to take things slow and resting often (decided to play as a mage. I'm still a lame lv 1 with just 2 spells and squishy as hell) now they are pestering me why we haven't reach nashkel yet. Is it just random dialog, or is there a risk of them leaving and/or betraying me?

pretty sure they will leave. dont know if they will turn on you.

Then it's inevitable. I'm enjoying exploring and from what I read getting to nashkel will end the chapter 1 and there's still a ton of things I wanted to do.

All of your companions with time sensitive quests Montaron and Xzar Khalid and Jeheriah and Minsc will leave you after a certain number of days if you don't do thier qeusts for Montaron, Xzar, and Khalid and co. its going to Nashkel for Minsc its when you agree to rescue the mage for him. Not sure the time on the Nashkel thing but I do know that Minsc is like 3 days.
I believe Minsc will attack if you take too long and I think Montaron and Xzar will as well though not sure on them.

while this is the most realistic approach, it's a bit annoying that the game tells me to forfeit all the side stuff to rush to the ending of the chapter just to not lose a companion

has nothing to do with chapters or rushing or w/e. it has to do with those 2 have a job to do. if your not going to join them you can kick rocks and go do your own thing. they have things to do and no time for your nonsense if you get in the way of their goals.

Ending Chapter 1 doesn't really affect much. Since you're now in Chpater 2, you can get your first dream ability, but that's about it. You can still go exploring if you want and Xzar/Montaron will stop bugging you. You can go kill the Basalisks east of the temple for XP, visit High Hedge for some spells, go get the CON tome at the Flesh Golem cave or whatever.

Your only real limitations are things like not being able to go to Cloakwood until chapter 4, Baldur's Gate until chapter 5 and Candlekeep until chapter 6, because those are all locked off for plot reasons.

I guess playing nevewinter nights 1 and 2 spoiled me.

Besides as mentioned, you don't actually lose anything by entering Naskel and starting chapter two.

Moving on to a new chapter doesn't automatically fail all your old quests.
