However, gods are pretty damn powerful if you know how to use them, so I suggest familiarizing yourself with them if you want to beat some of the harder dungeons. Of course, some gods are likely easier to master than others, depending on your playstyle. For example, I don't really like Binlor or Mystera, but almost always go for Jehora, Taurog, Earthmother or just about any other god, because they can make everything much easier if you're skilled enough.
In short, no you don't have to worship gods :)
Worshipping gods help out a ton in dungeon runs. They let you use a third resource - piety (besides heath and mana) to tackle the challenges in the map. Once you master the way to use gods effectively in your runs, you will really appreciate having them.
Gods do add more complexity to the game mechanics but you can always refer to the game wiki if you are not the type that enjoys discovering their traits on your own.
You don't have to worship any gods during runs - that's the way to get the faithless badge, and traditional methods to tackle the dungeons using mid-fight level-ups, regen fighting, smart use of items, etc. are still pretty much sufficient for you to beat them.
Once you worship a god, you can't opt out. You can however switch to other gods if you have sufficient piety (at least 50). Worshipping a god and which god to worship is a decision you have to make and stick to, but trust me, the effective use of gods make dungeon runs much easier.
That being said, the more gods you unlock, the more altars will start spawning during subsequent dungeon runs (you get up to three random altars per run once they're all unlocked, four if you use a special kingdome preparation). And as everyone else said, proper use of the various gods' powers can make you more powerful than pretty much anything else. It takes time to get to that point, however, so feel free to take things slow, but don't prevent yourself from actually unlocking them, as you'll hinder your progress to getting better :)
