You can add a model by browsing the Asset Library Window, selecting a model, and then dragging it from the Asset Library Window right into the Attributes Window, over the 'MeshFileName' attribute. Alternatively, you can drag from the Asset Library onto the Scene Viewer (where you see everything being drawn).
Then, if you go to the materials tab, you should be able to change the texture, by either clicking on the 1st Square, or clicking into the Texture1 attribute, then clicking the [...] button when you have clicked the cursor inside (to browse for the path).
Just a reminder that if you add your own texture files, to make sure those files are in the folder of your workshop mod, which needs to be in /Content/Workshop/YOURMOD/ or deeper. If you link it on your desktop or something, they won't show up for others when you submit your mod.
EDIT: Like how do you move the editor camera?
And here is a walkthrough video we made: https://www.youtube.com/watch?v=FQfp8PtKfTc
For moving the camera, the default movements require holding ALT and pressing different mouse buttons.
The button guide (including cameras) is here: http://www.octodadgame.com/workshop/index.php?title=Hotkey_Guide
You may find it easier if you change scene camera controls by going to Options, Control Scheme > Alternate Controls in editor.
