It might not hurt to list any other audio/video software you have installed that might be causing conflicts. Anything with codecs can cause all sorts of issues with other programs sometimes.
Also ... is there any pattern to when the game crashes/exits? Does it happen when you enter/exit a door? When you enter a new area? When you try to save or rest? When you open a dialog box with certain characters? ... or is it completely random? Does it give you an error message or just suddenly drop out to your desktop like you were not running the game at all? Is steam still running after it crashes?
More Info is needed to narrow down what the problem might be.
I had an issue with the game that turned out to be caused by the Sansa-Media-Converter software I had installed on my laptop at the time. You would not think that would matter, but it actually caused the game to lock up any time you tried to load a save file from a game in progress or tried to exit the game. Uninstalling that software fixed it immediately. It sounds like you are having a completely different issue, but that should give you an example of how many things can be a factor in your issue, which is why we need more info to help.
Did you install any mods that may be causing conflicts, or are you just trying to play vanilla (non-modded)?

The Video Software I am using is simply the control center that was installed with my drivers for the GeForce GT240. As for audio software. none. My monitor has built in speakers i just use the onboard jack and bam, no special sound card or anything. The windows 7 Ultimate I'm using is a fresh install so there arn't even any media utilities besides the one that came with windows obviously.
The Crashes are random, i haven't noticed a patern. The video gets slightly choppy right before it cuts out and Windows pops up an error that says "Morrowind has stopped working, Windows will try to resolve the problem" Steam is still running after morrowind stops completely. It has been less fequent these past few days but regardless it does still happen.

Morrowind has ALWAYS been an unstable game, even running on hardware and OS versions that it was supposedly OPTIMIZED for. Graphics and framerates will look choppy even on the most overpowered systems. Sadly, as good as the game is, the game engine is and always has been buggy.
If these crashes have been happening more frequently than once per hour, I'd keep looking for possible conflicts. However, if they are only happening once every 90 minutes or more ... it's probably just Morrowind Being Morrowind. It does that.
