Can I use a MIDI keyboard as an input device?
I compose using Adobe Audition right now, but I wouldn't mind playing around with this as long as I can use my MIDI keyboard to input

It is indeed possible! Music Creator 6 Touch is a fully functional MIDI Sequencer on top of all of its audio capabilities. You can send and receive MIDI data to and from external hardware synths as was as the built in and even 3rd party software synths. There are also several views to help you edit and arrange MIDI, such as a dedicated Piano Roll View, Staff View, and Step Sequencer View to name a few.
