I don't know of a quick guide to the symbols used but have you tried going into tools/technique guide/guitar menu? When I first started using the program it was mostly blank but I have done a few of the lessons and it's now filled out with all the techniques and symbols used. You may have to go through the lessons first though.
There is a mute symbol that looks like a cross but I haven't done that lesson yet :)
In the riff repeater if you see an exclamation mark it means you missed that note on your last play-through. In the English edition it's "Difficulty repetitions" & "Level up". What you do here is set the riff repeater to your desired difficulty first, say 50. Then try and play it perfectly. If level up is turned on and you play the riff perfectly you will level up and the riff's difficulty will be automatically increased when the riff re-starts. I think the repitions setting is the number of times you need to play the riff correctly before you trigger a level up.
"Speed repetitions" & "Accelerate" work exactly the same except on the speed instead of the difficulty of the riff.
"Master mode" will eventually make the notes dissapear from the track if you keep nailing that riff so it forces you to play entirely from memory.
