The current Steam distribution doesn't seem oriented to command line usage; the steam executable mostly accepts steam:// urls that instruct it to perform various actions.
You can take a look at /usr/share/applications/steam.desktop for a few examples.

If you're looking for a more general reference of linux commands, the GNU coreutils info pages (installed on most Linux systems) are a great reference. You can access it at http://www.manpagez.com/info/coreutils/ or by running "info coreutils"; the latter option only if you're feeling particularly adventurous though.
