Is there any chance to activate this again? Is it even still included in the current version? I'd really like to give it a spin, but have just bought the game last friday.

To answer my own question, I just found the info in another thread: It seems you can enable it by just setting your system clock to a previous date. I'll try that later...

Yeah, if you set the date to December 25th it becomes available, and even if you set your clock back to normal after that you can keep playing it if you continue your save game.
When you die or win the game it gives you the option to start again still in christmas mode.

It's kind of like a demo for the upcoming RPG mode DLC.
