Unless you wanted my objective view..
Which is expensive, as most people get paid to do that.
When you are in a town (there are at least 2 or 3 in every level), the timer stops. Here you can get quests, help, a timer rest (for an increasing gold price per reset), healing, ... When you're out in the wild, the timer ticks.
Encounters are random, give gold & XP, the fights are automatic (no abilities but "flee"). Eventually you level up high enough to beat the level boss (you'll get a message) and beat him. When a level is won, you get an item to equip (there are 5 item slots and about 6 or 8 stats).
On first playthrough (not finished) my levels clock in at 45 to 100 seconds.
