Hardest Creep gets through with zero damage?
I made up all my defense in single player learning the ropes and about 1hr into the game the hardest creeps with shields are getting through without any damage? Why is this?

Could be that you don't have enough Voltaic Liberation Apparatus taking down the shields that Madam Sudsie Lennor puts out? If you can't kill her and then reduce the shields on the units, they will pretty much not take damage.

Plus there is a visual cap on shields, but no actual cap on shields, so if they have been buffed up by sudsie a lot you may not notice them taking any damage for a while.

What is the best plan for dealing with the toughest creeps? I played some multiplayer yesterday and my maze pretty much obliterated everything except for the hardest ones that sometimes got all the way to the castle.

For classis TD games, I tend to try for thunder towers near the front (to get rid of their shields fast). This combined with lots of the catapults is pretty dang great. Also try to use lots of the better towers like hammers and the lava tower. Also build lots of fans to slow them otherwise your catapults won't hit them when they get the speed upgrades. And, don't just start building like this, you'll need to start out with some arrow towers and then slowly sell and rebuild till you have your ultimate defense for your final wave.

Oh and also, I ALWAYS build some catapults at the entrance to my base. This way if some get through, they have a bunch of catapults hitting them before they can take a wack at your base. (again i build completely differently for multiplayer)

Yeah, the catapults near the castle vs mortimers is almost exploitive how well it works...
