Will I understand it?
I like RPG games but I have never read or watched any Game of Thrones book/movie. Will I still be able to follow the plot and enjoy the story and game generally?

Probably not. Watch at least three episodes of the first season.

one of my friends absolutely loved the game and the story having never touched the books or TV show,

it left him really hyped to actually get round to the show,

personally as a fan of the show and the books im struggling to even get into it far enough to rate its story,

the game is certainly an acquired taste and rough around the edges too

well, so I guess trying the game without touching anything else about Game of Thrones won't get me confused about anything?

It will a bit, but that's nothing bad. You'll get the missing parts very soon in the game, just don't skip dialogues.

I think its a game that can stand on its own, but you'll enjoy it more with some of the history. This game story takes place before and a little bit during the first season of Game of Thrones. So maybe just watch the first season to get the basics down

I played and enjoyed the game before watching the show, which is absolutely fantastic. There was plenty of background info. that you won't be clued in on, but iirc, there's an in-game codex that explains things well. In terms of the main plot and the world in general, it will all make sense to you (all the main characters are new).

I'd encourage anyone who's on the fence with the game to stick with it. The game takes a while to get going, but there are moments throughout that are brutal and uncompromising. The ending, in particular, was terrific and worthy of the GoT name.
