I've spent waaaaay too much time in this game whether modding or playing it.
This game certaintly has a hard learning curve but once you understand it the game is incredible. I recommend choosing the Canary islands and speeding up the game for around 30 years and then saving and reentering as a random person in the world. It is incredibly satisfying seeing the insanity that is possible and slowly working your way up the ranks.
Even aside from the world the game brings, if you don't like medieval Europe then get a mod that is a post-apocalyptic North America or Skyrim or Game of Thrones. You can add magic, werewolves, and many other assortment of Fantasy beings. There's a mod that completely transforms the game into the space age. Counties are now worlds and it adds a ton more content with all new cultures and religions.
Even better than all that, if you don't like a small part of the game, even part of a mod, you can just take it out. The coding language is incredibly easy to grasp and you can remove or change pretty much everything in the game. The only real downside of the coding side of things is the fact that there aren't really many guides out there and the ones that are out there are kind of lame and lack support. That is all forgiven by me though as you can easily reference other mods and the game code itself to see how they do things.
To add even onto that the console in the game is well done with numerous commands. If you want to cheat you can cheat and if you want to play legit you can play legit.
I wholeheartedly recommend this game to anyone who has some time and the small commitment to learn the game.
