Republics keep popping up when I grant Duchies.
How can I tell if a Duchy will turn into a Republic when I grant it to someone? Is there a character trait I need to look for? I'll have a Duchy that I either usurped or created and then give it to a vassal since I'm an Emperor. It's a Duchy for me, but a Republic is formed whenever I give it to someone. How can I check this beforehand?

If you're giving duchies away to lord mayors then they'll become republics.

I thought Duchies could only be granted to a Count.

you have to be a king to keep them if your a duke and you give away a duchies then hes no longer under you

if the character is a city holder instead of castle holder then he will be a lord mayor for count and form a republic for duchy or higher. when you give counties and duchies to people make sure they hold castles or temples and not cities, unless of course you want vassal republics which can have advantages if you can keep them from revolting
