Start in Ireland. If you are using Ruler Designer, start as Duke of Munster. If not, start as Count of Dublin.

Count of Dublin is in a position to inherit Leinster very quickly, but only if you don't change the character. As Leinster and Dublin are part of two seperate two county duchies, this puts you in a position to obtain four counties of your own.

Munster has one troublesome vassal and the option to take Desmond. Its slightly more stable and probably a better choice if you don't have experience with other Grand Strategy games (if you do, then you know. Trust me.), but Dublin wouldn't be much harder.

I always design my own character and start as Duke of Gwynedd. Only one Earl who may eventually rebel but you will want his land anyway so plot to take it. Easy to fabricate a claim on the other provinces of wales. Take two and you can create/usurp the Duchy of Dyfed and then the Kingdom of Wales. Then I head for land in Ireland which is ripe for the taking. The first few rulers are always easy and by the time you start having problems with nobles you should already have enough gold, troops and land to handle them.

Within two rulers I always have the kingdoms of Wales, Ireland and Scotland.

I think that understanding how the game works is more important than starting position.

The guides here http://crusaderkings-two.wikia.com/wiki/Category:Beginner%27s_Guide helped me a lot and I would recommend this to anyone who struggles at start.

Understanding how the game works is good. You learn by playing. There is a reason that the Paradox Forums refer to Ireland as "Tutorial Island".

be the larger duke of wales, start in 1066 so england doesnt target you the other duchy is very fragmented therefore very easy to take control of and if you dont do ruler designer i think you have two daughters to marry off and two good male heirs
