any other religion. one county per vassal, save some money for emergency mercenaries and form alliances with strong neighbours (even if it's seljuk. permanent cancellor in their capital and they're a really powerful and reliable alliance). i almost never fear succession/civil wars only in the beginning they're annoying if there are strong duchies / family clans. save money, form alliances, let them revolt, win and disempower everyone (or at least let them pay for freedom - quite a bunch of money).
if you've different cultures/religions in your kingdom/whatever and you can't claim their titles.. give their kids teacher from your own culture/religion and they'll will convert most of the time. takes some time, but your next ruler will thank you.
