1) At the bottom of the screen is a list of all the units at the platform. You can click on these and deselect the ones you don't want to order to move. This is the solution to your actual question. Click on one unit type, to deselect it, and right-click on a destination. The selected unit type will then move. I think that's all you have to do; you may have to move the remaining unit type somewhere else, I can't remember.
2) At the top of the mini-map are three buttons marked 25%, 50% and 100%. Of the selected units, only the chosen X% will receive the order. So if you have a large force and want to split it into two, but want to keep the composition it currently has for both, select 50% and issue a move order. Half your force will leave, the rest will remain at the platform.
The other thing you have noticed is that the 'recall' order (the looped arrow to the right of the unit selection list) only works if the units are still in proximity to the platform. It allows you to immediately cancel orders if you've made a mistake but once they are en-route you cannot turn them around until they reach their destination, so be careful!
