Adding new models after Steampipe (Solved)
Used to be all you had to do to add new models added to TF2 was extract the contents of the materials gcf file into a folder and have SFM find that folder. Pretty simple stuff, but after steampipe hit all new models are put into a vpk file. I tried the same technique of extracting the files from the vpk into the same folder I used to use for the gcf files but that doesn't seem to work. Am I missing something dead obvious? My goal is to get the new Demoman misc (Dark Age Defender) in SFM but it doesn't seem to want to co-operate. Any help would be appreciated.

GCFScape will extract vpk files, but only if you upgrade your version to 1.8.4 . Still free and available here http://nemesis.thewavelength.net/index.php?p=26

This shows you how to access the vpk and be warned, the materails have been spit into 2 different VPKs. vmt files are in the materials folder in TF2_misc_dir.vpk and the vtf files are in the tf2_textures_dir.vpk

To access the vpk, you need to open the _dir file associated with the store you are trying to extract.

Oh wow, I completely missed the tf2_textures_dir.vpk file. That actually solved everything, thank you for showing the dead obvious thing that I missed.
