ME1: Closest is Liara
ME2: Continuing Liara, half-romance with Kelly (doesn't count as full one)
ME3: Liara, Samantha, half-romance with Kelly, half-romance with Samara (if you continued to try through ME2-ME3 and Citadel DLC)
Ashley is not a gay romance option ever.
So basically you go through with Liara, or wait for Samantha, or a form of both (ME1 Liara, ME2 Liara, ME3 Samantha).
Then Liara --> Liara (make sure to do Lair of the Shadow Broker DLC in late or post game) --> Liara or Samantha (if you want a human lesbian romance instead of a pseudo one).

BTW only Shepard is Male Straight Shepard
You can continue Liara in a more substantial way in Lair of the Shadow Broker DLC, while being a meany and flirting with Kelly on the side, I think.
Say whatever you will about your opinion on Shepard, but in whatever convos I have had with those associated with Bioware (yes really - I live in the vicinity of Montreal and know a few in industry), they really do view it as much more varied, with the 'Sheploo' (Shepard Mark Vanderloo face model) just being the marketing face of the game, nothing more. To them, ♥♥♥♥ Shepard, female Shepard, ethnic Shepard, etc, are all fully legitimate once the option exists. They understand player demographics so they're the least likely to not facilitate a hetero male white protagonist in their games, and least likely to not include it in marketing for their games, but they don't believe it is at all as direct as "BTW only Shepard is Male Straight Shepard". Bioware believes in customization actually MORE than the 'default storyline' - they just have to wrangle with limited resources like all game developers do.

Lets just say, that she is the most my kind type romance option out of all the others.
