btw, i'm asuming you are starting but if you are already into KF i would say:
Sharp Shooter : Xbow and Hand Cannon
Firebug: Trench gun and Tec9
Demo: M4 and Pipes
Commando: SCAR and Bullpup
Support Specialist: AA12 and Trench gun / AA12 and Shotgun
in my opinion Medic and Zerker have not quite much of a choice, zerker has mostly melee weapon and depending on what you use you can complement with a gun, xbow, shotgun or explosive, same goes for Medic who has medi-guns only, my best advice for the medic is getting some ranged weapons like the LAR or the Xbow, the Hand Cannon is also useful and powerful on his hands

As you increase your knowledge of the game and your skills there are other loadouts that can be more versatile. DarkFalz named some of them although I roll with some other weapons here and there.

Schniedzekk Medic Gun + Crossbow + .44 Magnum
(Crossbow + Flare Revolver for Patriarch)

Support - axe+shotgun+hunting shotgun (try to find the axe, ask a high level zerker to buy it or buy it as zerk then switch, it's damn expensive offperk. Katana works too, the point is to be able to flinch Scrakes for the uppercut combo).
Medic - mp5+xbow+mk23 (on lower difficulties where the offperk xbow nerfing doesn't take place) or mp5+LAR+axe (LAR for crawlers, stunning husks, axe for FPs if necessary). If the team is getting pummeled, a second medic gun comes in handy, especially with lower level medic.
Sharpshooter - I usually go with xbow+mk23, but LAR+M14 is more efficient in the right hands.
The rest of the perks I have less experience with, so I can't really tell.
Medic

Actually it works just fine. I use mk23 along with this loadout to conserve some ammo though. The m32 with nades makes it possible to take out a 6man HOE Fleshpound when neccessary too. As you say some spots suits better than others. Also if you already have a demo in the team this is kinda unneccessary if you are not holding an open spot.
These are the setups I use:

- Single Shot Musket + 2 x Flare revolvers and a mp5
Sharp Shooter
- Single Shot Musket + M14
- Crossbow + 1 Handcannon + 1 MK23
Firebug
- Husk Fireball Launcher + 2 x Flare revolvers
- Trench + 2 x Flare revolvers.
Commander
- Rising Storm Tommygun + Scar + 2 x Flare Revolvers
- Scar + Fan Fal
Support
- Hunting shotgun + HSG + MK23
- HSG + Combat Shotgun + an Axe
Demo
- Bazoka + Pipe
- M79 + M32 + Pipe + MK23
Setup:
2 Supports -_-
Early game: HSG, Sawed-Off Shotgun (double barrel shot kills the scrake, 2 guns kills fleshpound, but I'd like to have AA12 already before fleshpounds comes (only works for 2 players! Maybe 3, but if you have 6 people around killing scrakes won't be that easy)).
Late game: AA12+HSG (HSG for trash, AA12 for scrakes and fleshpounds).
Strategy:
Just find a proper place to defend yourselves, better to be tunnel and where monsters can't come from the back. And shoot, shoot, shoot... :) Beauty about shotguns that the shots penetrate the enemy.
I've tried combat shotgun instead of HSG, but the reload time is way too bad. With HSG you just pop in another clip with 12 shells, while combat shotgun has to reload 6 one by one, which often results into being overwhelmed since the strategy we use is to be stationary.
