I found that disablong/enabling framerate limitter in advanced graphics options greatly influences the control over the plane. For me generally it is easier to fly with limiter off, but it causes many other bugs (as in being unable to liftoff the seaborn plane or cars spawning in the air), so I am forced to switch between options constantly. Try and see for yourself.
