Can you verify the integrity of the game cache through steam?
If that doesnt work you can navigate to the following folder (you will have to enable "Show hidden files and folders")
appdata\roaming\doublefine\stacking
and delete the file called "screen.dat"
Let me know how that works.
I've found the folder you recommended, and Stacking isn't in there...
And if that folder is not there it basically means that the game does not even get far enough for it to create it (which is really soon after starting the app).
I know it is a pain, but can you delete all the files from stacking from your system? Once that is done, reboot and then go and download Stacking again, making sure that you have a steady internet connection during the download.
This should solve similar graphical problems with other games too. I often have this problem with games, and this solution always seems to work. It solved my black screen for Stacking, so maybe it's the same as your problem?
