Other Grimps and stuff missing

I have completed the normal game and only got 6 more spectra to get in encore, how can I switch to the other Grimp? And also I remember there being another mode, and a custom music option on the PS3 where is all this in this version?

The mode you're referring to is Spider mode, which was removed in this version because it was too easy. Switching Grimps was tied to the multiplayer play, which was also removed. It's possible that switching grimps and local co-op might make it back into Eden, but the Spider mode probably won't.
