This game does not simulate real life physics.
In real life, Rolling a helicopter left/right does cause the helicopter to move in that direction, but the tail of the helicopter will lag behind, causing the helicopter to turn as well as move to the side. A real helicopter cannot move straight sideways for an extended period of time. This game disagrees.
In real life, yawing the helicopter left/right does NOT change the direction of the aircraft anywhere near as dramatically as this game implies (According to this game, yaw controls are the ONLY way to point your nose a different direction, but in the real world, /rolling/ accomplishes that as well as changing the angle of flight to maintain the new direction).
It's not a matter of difficulty, it's a matter of it calling itself a simulator when it's not.
